“I’m Not a Chef” - Lemon Pound Cake

If you’re like me, the way to your heart is a trip to the local bakery shop. I am the first to admit that I have a serious sweet tooth. Cakes, pies, donuts, cannoli…I love them all! It’s like my stomach has a non-discriminatory policy for all baked goods. As much as I love sweets, I typically don’t have much time to create any. The desire to cook, yet not spend an entire day in the kitchen, got my wheels turning. The easiest solution to avoid a day’s worth of baking, was to purchase a prepackaged pound cake (hold off on the judgement). I remembered that I had a jar of lemon curd in my fridge and decided to give the cake a little attention.


Ingredients

1 - pound cake loaf
1 - stick of butter (room temp.)
1 - jar of Meyer lemon curd
Raspberries & mint (garnish)

Step 1

  • Take pound cake & cut the loaf into 1/4 in. Slices.

  • Lightly butter each slice on both sides.

  • Bring a grill pan to medium heat and sear each slice of cake on both sides (Approx 1-2 minutes per side).

  • Place the cake slices on your serving plate.

Step 2

  • While the cake slices are still warm, spoon a dollop of meyer lemon curd onto each slice.

  • Garnish with fresh raspberries & mint.
